Interesting picture. It doesn't look at all like 'Safrano'. Attempting to identify unknown old roses from old pictures is likely to be an exercise in wild extrapolation.
I suspect a lot of it has to do with the way the various pigments degrade with age. It would be handy to have a reference guide to this process. I'm sure someone, somewhere, must have done work on this. Art galleries would probably be a good place to start, as they have to conserve and repair all sorts of works.
